Marlene Fernandez stirs a vat of fermenting Mango Chutney Meat Sauce at the Estero Historical Society cottage in Estero Community Park. Fernandez has directed this annually anticipated fundraiser for the Historical Society for the last 12 years and will retire after this summer’s chutney production. The intensive process begins the first of June with shelling fresh tamarinds. Mango Chutney Meat Sauce is a recipe handed down from Edith Trebell, who owned the Tropical Fruit Products Company, formerly on U.S. 41 in Estero, which shipped chutney and jams around the nation. Twenty-six gallons of chutney have been fermenting all summer and are now ready for purchase. A half-pint is $6; one pint is $10; and a quart is $25. Homemade mango jam is available for $5.
